Tomato Qunioa Pulav with Sambar powder



Quinoa - 1 cup ( cook with 2 cups of water in rice cooker)
Onion - 1 small chopped
Green chilli - 2 chopped
Tomato - 1 M - chopped
Curry leaves - 1 spring
Cumin seeds - 1/2 tsp
Mustard seeds - 1/2 tsp
Chana Dal - 1tsp
Urad dal - 1 tsp
Sambar Powder / Curry Powder - 1tsp
Salt - as per taste
Lemon juice - 1 tbsp
Caoriander leaves - 1 tbsp


Method:

1. Heat oil in a pan.
2. Add mustard ,cumin seeds, let it sizzle.
3. Add Chana Dal and Urad, let it become light brown.
4. Add onions n green chilli and curry leaves, fry till onion turns light brown
5. Add Tomato and cook till oil separates from tomato.
6. Add Sambar powder / Curry powder and salt n mix , cook in slow flame for 5 mins.
7. Add cooked quinoa and mix well n switch off the flame.
8. Garnish with lemon juice and Coriander leaves.





Spicy Quinoa Vegetable with curry powder ( Vegetable rice type)



Quinoa - 1 cup ( cook with 2 cups of water in rice cooker)

Curry Powder - 1tsp
Mixed Vegetables - 1 cup ( frozen) ( add little water and Microwave for 5 mins)
Salt - as per taste
Lemon juice - 1 tbsp
Caoriander leaves - 1 tbsp


Method:

1. Heat oil in a pan.
2. Add cumin seeds, let it sizzle.
3. Add onions n green chilli, fry till onion turns light brown
4. Add mixed vegetables and give a good stir , it does not need cooking as we already cooked in MW.
5. Add curry powder and salt n mix and close the lid, cook in slow flame for 5 mins.
6. Add cooked quinoa and mix well n switch off the flame.
7. Garnish with lemon juice and Coriander leaves.

Vijay’s Mutton Korma Special

 

Today is Saturday, Vijay is relaxed and asking everyone at home what they want to eat, I said Mutton kurma ..so here it is, his own orginal creation, so we named it as Vijay’s Mutton Korma Special. The taste was heavenly. To believe it, you need to try it.

Vijay’s Mutton Korma Special

Mutton (Goat) : 2 ~ 2.5 lb (medium pieces)

Onions: 2 Large (thin diced)

Green Chilli: 4 medium (thin diced)

Tomato: 1 medium (medium diced)

Curd: 1 cup

Green Chilli: 4 medium (thin sliced)

Oil: 7 tbsp

Ginger Garlic Paste: 1.5 tbsp

Cinnamon: 1 ~2 peels

Elaichi : 2 cloves

Star anise: 1

Bay leaf: 1

Mace: 3~5 petals

Coriander Powder: 2 tbsp

Cumin Powder: 1 tsp

Red chilli powder: 1 tsp

Turmeric powder: ½ tsp

Black Pepper: ½ tsp (fresh ground)

Salt: 2~2.5 tbsp

Cilantro: ½ cup (finely chopped)


 

 Method:

1.       In a 4~5 quart pressure cooker. Pour 6 tbsp of oil and heat it up.

2.       Put the cinnamon, star anise, mace, bay leaf, elaichi, let them sputter for 30 seconds

3.       Add the diced green chillies, while they are sputtering add the diced onions.

4.       Sautee the mix till the onions are fried to a golden brown (this takes about 10 ~ 12 minutes)

5.       Add the washed mutton (goat) pieces mix well, (the mutton will begin to ooze out water) till the mutton pieces turn brown.

6.       Add salt per taste (usual measure is 1 tbsp per lb of meat) adjust per your taste. The mutton will ooze more water after this.

7.       Add ginger garlic paste and mix well, make sure the water oozed from the mutton is evaporated and the mix becomes very thick and begin to stick to the bottom of the cooker.

8.       Add diced tomatoes and Red chilli powder, mix well, and cook for 2 minutes

9.       Add Coriander powder, Cumin Powder, Black Pepper powder, Turmeric powder, mix well and cook for 5 minutes.

10.   Add 1 cup of curd and cook for 5 minutes.

11.   Add 1 ~ 1.5 cups of water and mix well.

12.   Cover the pressure cooker lid and put the whistle on, leave this on medium flame till you get 3 ~ 4 whistles (adjust the cooking /# of whistles depending on the tenderness of the meat).

13.   Shut off the heat and let the pressure completely release from the cooker before you open the lid (the sure way to check if the pressure is gone is to slightly try pulling on the whistle, if it’s not tight then the pressure is gone, you can take of the whistle and then open the lid)

14.   Check for the consistency of the gravy, you can thicken it if you wish by bringing it to a boil without covering.

15.   Finally add the chopped cilantro and transfer to a serving bowl.

Quinao Vegetable pulao:

Ingredients
Quinoa-1 cup ( washed and soak for at least 30 mins)
Coconut milk-1/2cup
Water-1.5 cup
Frozen mixed vegetables-1cup
Salt to taste
Turmeric powder-1/4tsp
Sliced onion- 1/2 sliced long and thin
green chillies- 2 slit
mint leaves-2tsp chopped
ginger garlic paste - 1 tsp
Oil-2tsp

Dry masala's 
Cloves - 3
Cardamom- 2 small n 1 big ones
Cinnamon-a small piece
Bay leaf-1

  • heat oil in pan  and dry masala's n fry them ...
  • add onion n saute them till light brown...
  • now add ginger garlic paste, turmeric  n green chilli and fry well..
  • add vegetables , salt , mint n fry till veg's r soft...
  • now add quinao n roast for 2 mins..
  • add coconut milk n water mix well..
  • cook for 15 mins ..on stove or transfer everything to rice cooker n cook ..
  • garnish with cilantro n serve with raita..

Quinoa Dosa




Qunioa - 1 cup
Rice flour - 2 tbsp
Green chillie - 1
Ginger - 1/2 inch
Eno - 1 tsp
Salt - as per taste
Oil - as needed

Method:

1. Soak Quniao for 10 mins and later drain away the water.
2. Grind Quinoa, rice flour, green chillies, ginger and salt with less water.
3. Add eno and let it rest for 5 mins.
4. Batter should be like our regular dosa batter.
5. heat the skillet and make dosa's.

Green Gram Dal


I got this  dal idea from my elder sis, she always tries to make healthy food at home and this dal is very regular.

Ingredients
Green Gram - 1/2 cup
onion - 1/2 sliced long
tomato - 2 chopped fine
green chillies - 2
dry red chillies - 2
mustard - 1/4 tsp
cumin seeds - 1/4 tsp
urad dal - 1/4 tsp
turmeric - 1/4 tsp
salt - to taste
tamarind paste - 1/2 tsp (if u r using amchur powder , then add 3 pinches)
Cilantro - 2tbsp chopped

Method :
  • Wash n soak  green gram for over night n cook for 3 whistles nicely and mash them .
  • heat oil in pan add mustard, cumin and urad dal n let it splutter.
  • now add garlic,red chilli and green chillies n fry nicely.
  • add onion n fry till they r little brown.
  • add tomato n turmeric n cook till tomatoes r mushy
  • now add mashed dal n salt n tamarind paste give a nice boil .
  • add 1/4 cup water if u think its thick.
  • garnish with cilantro

You can eat this with Roti or Rice ..enjoyyyyyy

Simple Mutton Curry

My elder one, Pari likes mutton in any form. this is specially for her. Love you chitti thalli..


Ingredients:

Mutton  - 2 lbs
Onions - 2 medium chopped
ginger pate -  2tsp
garlic paste - 2 tsp
Tomato - 3 (pureed)
red chili powder- 11/2 tsp
coriander powder - 2 tsp heaped
salt - to taste
Turmeric powder - 1/2 tsp
coriander leaves - 3 tbsp
green chilies - 3 whole ( don't slit)
Dry garam masala's - cardamoms (4), cinnamon ( 2inch), cloves ( 4)
  • Heat oil in pressure cooker add all dry masala's n onions
  • fry till onions turn golden brown as this gives curry nice color.
  • now add mutton pieces n ginger garlic paste n fry till water is all gone
  • add all spices n saute for 2 mins .
  • then add tomato , salt and mix well n wait for 2 mins
  • now add 1 cup of water n close the lid n give pressure for 3 whistles .
  • open the lid and add green chili and coriander leaves n mix well n cook in slow flame for 5 mins...
  • yummy mutton curry is ready.
