Spring onion tomato curry

 Spring onion tomato curry

Spring onion - 10 - chopped 
Round tomato - 1 Medium - cut thick long slices
Onion - 1/2 small - chopped
Curry leaves - 1 spring
Green chili - 1 chopped
Red chili powder - 1/2 tsp
Coriander powder - 1/2 tsp
Turmeric - 1/4 tsp
Salt
Urad dal - 1/2 tsp
mustard seeds - 1/4 tsp
cumin seeds - 1/4 tsp
Ginger garlic paste - 1 tsp



Method:
1. Heat oil in a big wok, add urad dal, mustard seeds, cumin seeds, and fry for a min
2. Now add onion, curry leaves, green chili, and fry till onion are translucent
3. Now add ginger garlic paste and mix well.
4. Now add tomato, red chili powder, coriander powder, turmeric, salt and mix well and cover with the lid and cook till oil comes out.
5. Now add spring onion and mix very gently and close the lid and cook for 5- 10 mins on low flame.
7. Now add 1/2 to 1 glass of water and cook for more 10 mins with lid closed on low flame.
8.  Switch off the flame and serve with hot rice

Tomato Upma

Tomato Upma

Rava / Sooji - 1 cup 
Onion - 1 small, chopped fine
Green chili - 3 or 4 - chopped fine
Ginger Garlic paste - 1 tsp
Curry leaves - 1 spring chopped
Tomato - 1 small chopped 
Oil - 2 tbsp
Urad dal - 1/ tsp
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
salt - to taste ( I added 3/4 tsp)
Water - 3 cups (1/2 cup more if you want little wat upma)
Ghee - 1 tsp

Lemon juice - 1 tbsp ( optional)


Method :
1. Heat oil in a pan add urad dal, mustard, cumin seeds, and fry nicely
2. Now add onion, green chili, curry leaves and fry till onions turn translucent
3. Now add ginger garlic paste and mix well and Now tomato and fry for 3-4 mins.
4. Now add water and salt, ghee and wait for a 1 boil
5. Now add sooji / Rava and mix well and close the lid on low flame for 2-3 mins and switch off the flame
6. Now add lemon juice and mix well and close the lid and leave for 5 more mins and serve.

How to cook rice in an Instant pot 


Rice - 1 cup ( Sona masoori)

Water - 2.5 cups

Salt - 1/2 tsp ( optional)


Preparation:

1. Wash rice in cold water and drain and add 3 cups of water and keep aside for 5 mins


Method :

1. Open the Instant pot lid and in the inner pot, add 1 cup of water and place a trivet in the bottom.

2. Now keep the prepared washed rice bowl on top of the trivet and close with a lid

3. Now lock the instant pot lid in place and seal the vent. Select Manual or High pressure for 10 mins.

4. When the cooking time ends, let it sit for 10 mins and turn off the manual/pressure cooker mode.

5. Take out the cooked rice bowl and serve hot with dal and curry

Cabbage- 3 cups ( cut them small and fine)
Peas - 1/2 cup (fresh. or frozen)
Onion - 1/2 cup chopped
Green chili - 4 chopped
Turmeric - 1/4 tsp
Fresh or dry Coconut - 1/4 cup
Salt - to taste (steam method does not need much salt)
Water - 1 tbsp
Oil - 1 tbsp or 2 tsp
Mustard - 1/4 tsp
Cumin - 1/4 tsp
Urad dal - 1 tsp
Chand dal - 1 tsp
Curry leaves - few

Preparation:

In a bowl, add chopped cabbage, onion, green chili, turmeric, salt, coconut, curry leaves and keep aside.

Method :


1. In instant pot, press saute mode and heat oil in an inner pan, 
2. Now add mustard, cumin, urad dal, chana dal, and let it fry until urad dal turns light brown
3. Now to the above seasoning add cabbage ingredients bowl mix which you already prepared and fry for a min.
4. Now add 1 tbsp of water, close the instant pot lid, press steam (more) for 1 min, and set pressure valve set to sealing.
5. Once the instant pot shows OFF or L001, quickly release the pressure and wait till the pin goes down.
6. Open the lid, mix, and serve with hot rice or roti.

Beans - 2 cups chopped small
Oil - 2 tbsp 
Mustard seeds - 1/4 tsp
Cumin seeds - 1/2 tsp
Onion - 1 small
Tomatoes - 1 small
Green chili - 1
Curry leaves - few
Ginger garlic paste - 1/2 tsp
Red chili powder - 1/2 tsp
Coriander powder - 1/2 tsp
Salt - 3/4 tsp
Water - 13/4 cup

1. Heat oil in a pressure cooker, add mustard and cumin seeds
2. Now add onion, green chili, curry leaves, and fry nicely till the onion turn translucent.
3. Now add green beans and fry for 5 mins
4. Now add ginger garlic paste, red chili powder, coriander powder, turmeric, salt and mix well for 2 mins
5. Now add tomato and cook for 2 mins
6. Now add water and close the lid and give 3 whistles and switch off the flame.
7. Now the pressure is done, serve with hot rice.

Cooked dal - 1 cup
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Urad dal - 1/2 tsp
Garlic - 2 crushed
Onion - 1/4 cup sliced long
Green chili - 1 slit
Dry red chili - 1 broken
Curry leaves - 4 broken
Hing / asafetida  - 1/8 tsp
Turmeric - 1/8 tsp
Salt - 1 tsp
Ghee - 1 tbsp
Oil - 2 tsp


Method : 
1. Heat oil in a pan, add mustard, cumin seeds, urad dal, garlic, and fry for 1 min
2. Now add onion, green chili, dry red chili, curry leaves, and fry till the onion turns light brown.
3. Now add turmeric, hing, and salt and mix well for a few seconds
4. Now add boiled dal and 1/2 cup water and let it boil.

Garlic bread

 Butter - 6 tbsp

Bread - 1
Butter - 1 tsp
Pasta sauce - 1 tbsp
Garlic powder - 1 tsp ( Sprinkle sat on top of garlic powder)
Pasta sauce - 1 tbsp
Shredded cheese - 3-4 tbsp
Dried parsley or oregano - 1 tsp ( sprinkle on cheese)

Method:

Take bread, spread butter, garlic powder, salt, pasta sauce, cheese, parsley/ oregano
bake at 400 for 4-6 mins

 Hyderabadi Talimpu rice

Cooked rice - 1.5 cups
Mustard seeds - 1/4 tsp
Cumin seeds - 3/4 tsp
Garlic - 2 cloves - chopped
Onion - 1 small chopped long
Green chili - 2 chopped
Curry leaves - a few chopped
Red chili powder - 1/2 tsp or according to your taste
Turmeric - 1/4 tsp
Salt - 3/4 tsp
Oil - 1 tsp
Ghee - 1 tsp

Method:
1. Heat oil and ghee in a pan, add mustard seeds, cumin seeds, and fry for a min
2. Now add garlic, and fry for a min.
3. Now add onion, green chili, curry leaves, and fry till the onion turns light brown.
4. Now add turmeric, red chili powder, salt and mix well.
5. Now add cooked rice and mix well and lower the flame and close the lid for 5 mins.
6. Switch off the flame and serve with raita.

Idli rava upma

Ingredients:

Idli Rava- 1 cup
Urad dal - 2 tsp
Chana dal - 2 tsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Cashews - 10
Onion - 1 small chopped
Green chili - 2 chopped
Curry leaves - 10 chopped
Ginger - 1 tbsp chopped
Water-3 cups Milk- 1 cup
Salt - to taste
Oil - 2-3 tbsp
Ghee - 1 tsp for garnishing



Method :
  1. Heat oil in a pan, add mustard seeds, cumin seeds, urad dal, chana dal, and fry till light brown
  2. Now add onion, green chili, curry leaves, ginger, cashews and fry for 2 mins
  3. Now add water and milk and mix well and let it boil
  4. Now add idli rava, salt mix to boiling water and mix well for 2 mins.
  5. Now switch off the flame and close the lid and leave for 5 mins
  6. Now add ghee on top and mix well and Serve
