Sugar-free Almond bread / Almond bread with dates
Dry ingredients
Almond flour - 2 cups
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Salt - 1/2 tsp
Wet ingredients:
Eggs - 3 ( normal temperature)
Olive oil - 1/2 cup
Vanilla essence - 1 tsp
Pitted Dates - 5 (big ones)
Garnish
Pitted Dates - 1 or 2 chopped in small pieces
Preparation:
1. Soak dates in 2 tbsp of hot water for 10 mins and grind them into a paste
2. Grease bread loaf pan with butter, and place a greased parchment paper or foil in the dish and keep it ready
Method :
1. Mix all dry ingredients and keep them aside.
2. Now in a big bowl, add eggs and beat them nicely.
3. Now in eggs add olive oil, vanilla essence, dates mixture and mix everything well.
4. Now combine dry ingredients with wet ingredients and mix nicely making sure no lumps
5. Transfer the above-mixed mixture to the greased bread loaf pan.
6. Sprinkle 1 chopped date on top
7. Now Bake @ 350°F for 55 minutes until the toothpick is clean when inserted.
8. Once done, take out and let it cool down before slicing.
