Capsicum Quinoa (Capsicum Rice)




Quinoa – 1 cup cooked
Bell pepper (Capsicum) – 2 big ( cut in small cubes)
Ginger garlic paste – 1tsp
Salt
Turmeric – ¼ tsp
Ghee – 1tbsp


Masala :

Dry red chillies – 4
Urad dal – ½ tbsp.
Mustard – ½ tbsp.
Cumin seeds – ½ tbsp.
Sesame sees – 1 tbsp
Peanuts – 1 tbsp
Coriander – 1tbsp
Curry leaves – 6 leaves

Heat the pan roast everything without oil and make a fine powder.


Rice preparation:

1.    Heat ghee in a pan
2.    Add bell pepper and fry nicely
3.    Add salt n mix well
4.    Add Ginger Garlic paste and turmeric n mix well.
5.    Add masala powder n mix well for 2 mins
6.    Add Quinoa and mix well

7.    Garnish with coriander leaves n lemon juice

Ava petina Quinoa pulihara ( Mustard paste Lemon Quinao)







Quinoa - 1 cup ( cook with 2 cups of water in rice cooker)
Onion - 1/2 small chopped
Green chilli - 2 chopped
Curry leaves - 1 spring
ginger - 1/2 inch ( chopped fine)
Mustard seeds - 1 tbsp ( make a paste with little water)
Chana Dal - 1tsp
Urad dal - 1 tsp
Turmeric - 1/2 tsp
Cashews - 5-10 (as per your wish)
Salt - as per taste
Lemon juice - 1lemon juice
Caoriander leaves - 1 tbsp


Method:

1. Heat oil in a pan.
2. Add chana dal and urad, let it become light brown.
3. Add cashews,  curry leaves fry for 1 min.
4. Add onions n green chilli and ginger pieces, fry till onion turns light brown
5. Add turmeric and salt
6. Add cooked quinoa and mix well n switch off the flame.
7. Add mustard paste and mix
8. lemon juice. mix well and Garnish with Coriander leaves.



Quinoa Pulao with green beans with Surti papdi lilva beans (chikudukaya ginjalu)





Quinoa - 1 cup ( cook with 2 cups of water in rice cooker)
Onion - 1 small chopped
Green chilli - 2 chopped
Ginger Garlic Paste - 1tsp
Tomato - 1 (chopped)
Curry leaves - 1 spring
Cumin seeds - 1/2 tsp
Curry Powder - 1tsp
Red chilli powder - 1/2 tsp
Green Beans - 1/4 cup ( frozen) ( add little water and Microwave for 5 mins)
surti papdi lilva beans - 1/2 cup (( add little water and Microwave for 8-10 mins))
Salt - as per taste

garnish:
Lemon juice - 1 tbsp
Caoriander leaves - 1 tbsp

Method:

1. Heat oil in a pan.
2. Add cumin seeds, let it sizzle.
3. Add onions n green chilli, fry till onion turns light brown
4. Add ginger garlic paste and mix well till raw smell goes away
5. Add green beans n lilv a beans and give a good stir , it does not need cooking as we already cooked in MW.
6. Add curry powder, red chilli powder and salt n mix and close the lid, cook in slow flame for 5 mins.
7. Add Tomato and mix well and cook till oil oozes out
8. Add cooked quinoa and mix well n switch off the flame.
9. Garnish with lemon juice and Coriander leaves.

Palak Quinoa Pulao





Quinoa - 1 cup ( cook with 2 cups of water in rice cooker)
Onion - 1 small chopped
Spinach / Palak - 1/2 cup or 1 cup
Mint - 7 to 8 leaves chopped
Coriander leaves - 2 tbsp chopped
Curry leaves - 1 spring
Green chilli - 2 chopped
Redchilli garlic paste - 1/2 tsp
Sesame seeds - 1tbsp
Dry red chillies - 3
Cumin seeds - 1/2 tsp
Mustard seeds - 1/2 tsp
Chana Dal - 1tsp
Urad dal - 1 tsp
Salt - as per taste
Lemon juice - 1 tbsp

Preparation:

1. Roast sesame seeds and 2 dry Red chilli n make a paste.

Method :

1. Heat oil in a Pan
2. Add Chana dal, Urad dal, Mustard, cumin seeds and fry them
3. Add Onion and green chillies n fry till onions r light brown coclor.
4. Add Chilli garlic paste and mix well.
5. Add Spinach, mint, caorinder leaves and curry leaves n let it cook till for 5-6 mins with closed lid.
6. Add sesame seed powder and salt mx well and close the lid for more 5 mins.
7. Add quinao and mix well
8. Squeze lemon for extra zing.

Brinjal, tomato and bottle gaurd pachadi (chutney).

My mother in law is very creative when it comes to cooking. Today morning she was going through fridge and she found nothing to cook but only 2 brinjal and 1/2 bottle gaurd. so she decided to make pachadi ( chutney) and my 4yr old daughter ate everything with this yummy pachadi :).



Brinjal - 2 small - chopped
Tomato - 2 - chopped
Bottle gaurd - 1/2 cup deseeded
Green chilli - 4 0r 5 - chopped
Garlic cloves - 2 or 3 ( small)
Cumin seeds - 1/2 tsp
Tamarind - 1/2 lemon size soaked in little water
Salt - as needed.

Tampering :
Mustard seeds- 1/4 tsp
Cumin seeds- 1/4 tap
Dry red chillie - 2 broken
curry leaves - 5 or 6
Hing - apinch
oil - 2 tbsp

Method:
1. Heat oil in a pan
2. Add Cumin seeds, Garlic, Green chili and Bottle guard and fry nicely . let bottle guard become soft.
3. Add brinjal and cook till soft
4. Add tomato and cook till soft
5. Add tamarind n fry for 1 min
6. Now grind everything with salt

Now do tampering with tamepring ingredients.

Spice Indian Chicken Fried Qunioa (Chicken Fried rice type)

Quinoa - 1 cup ( cook with 2 cups of water in rice cooker)
Chicken - 1 cup ( chopped in cube peices)
Eggs - 2
Mixed Vegetables - 1 cup ( frozen) ( add little water and Microwave for 5 mins)
Onion - 1 small chopped
Green chilli - 2 chopped
Garlic - 5 cloves finely chopped
Chicken noodles masala powder - 1 tsp ( the masla packets you get in noddles) ( or add pepper)
Salt - as per taste
Soya sauce



Preparation:
1. Fry Chicken peieces with pepper and salt and keep aside
2. Make an omellete with egss with pepper and salt and keep aside
3. Cook Mixed vegetables with 2 or 3 tbsp of water in Microwave for 5 mins.

Method:

1. Heat oil in a pan.
2. Add garlic, let it sizzle.
3. Add onions n green chilli, fry till onion turns light brown
4. Add mixed vegetables and give a good stir for 1 min , it does not need cooking as we already cooked in MW.
5. Add Soya Sauce  and chicken masala powder n mix
6. Add cooked quinoa, chicken and mix well.
7. Add omellete pieces.
8. check the salt and saya sauce if u need more.

Imp Notes:

* Soya sauce and chicken masala have lot of salt, please be careful adding salt.
* If you dont have Chicken masala , you can add peeper and salt or use curry powder.

Quinoa - 1 cup ( cook with 2 cups of water in rice cooker)
Onion - 1/2 small chopped
Green chilli - 2 chopped
Curry leaves - 1 spring
Cumin seeds - 1/2 tsp
Mustard seeds - 1/2 tsp
Chana Dal - 1tsp
Urad dal - 1 tsp
Dry Red Chillie - 2
Turmeric - 1/2 tsp
Cashews - 5-10 (as per your wish)
Salt - as per taste
Lemon juice - 1lemon juice
Caoriander leaves - 1 tbsp


Method:

1. Heat oil in a pan.
2. Add mustard ,cumin seeds, let it sizzle.

4. Add cashews, dry red chilli, curry leaves fry for 1 min.
5. Add onions n green chilli, turmeric ,fry till onion turns light brown
6. Add cooked quinoa and mix well n switch off the flame.
7. Add lemon juice and Salt . mix well
8. Garnish with Coriander leaves.
