Hyderabadi Egg masala - mom special
Oil - 4 tbsp
Cumins seeds - 1 tsp
Mustard seeds - 1 tsp
Curry leaves - 10 - 12
Green chilies - 2 chopped
Ginger garlic paste - 1 tsp
Red chili powder - 1.5 tsp ( 3/4 tsp normal chili powder 3/4 tsp Kashmiri chili powder)
Salt - 1 tsp
Turmeric powder - ½ tsp
Onion - 1 small Chopped
Tomato - 4 medium round ones - chop them fine
Coriander leaves - 1/4 cup
Eggs - 6-8 eggs
Garam Masala - 1/2 tsp to sprinkle
Salt - 1/4 tsp to sprinkle
Coriander leaves - few for garnishing
Method :
- Heat oil in a pan, add cumin seeds, mustard seeds, curry leaves, green chilis and fry for a min.
- Now add ginger garlic paste, red chili powder, turmeric and salt and mix well for a min
- Now add onions and fry till light brown
- Now add tomato, coriander leaves and close the lid and cook until tomatoes leave the oil to the sides
- Now break the eggs as a whole in curry base one in each corner.
- Now sprinkle coriander leaves, garam masala and salt on top and close the lid and cook on slow flame for 20 mins
- When you see eggs are cooked nicely. Turn them upside down and cook with close lid for 5 more mine.
- Switch off the flame and Serve with rice or roti
